The chefs were required to make a course in each of these four categories: Latin, Continental, Asian, Modern American. They appear below in that order for both cities. To the menus!

  • Course 1: Kathryn Mathis. Beef tartare tostada, salsa macha, chapulines aioli, cured duck egg.

  • Course 2: Eric Smith. Tuna and watermelon noodles over compressed garlic with basil, sheep’s milk cheese and lattice potato chips.

  • Course 3: Jeff Chanchaleune. Khao Mun Gai — poached chicken breast, chicken velouté, dill oil, celtuce, pickled bamboo, aromatic Koshihikari rice.

  • Course 4: Garrett Hare. Sous vide pork belly with black truffle potlikker consommé and blackened apple.

  • Dessert: Provided by Jones Assembly’s pastry chef, Laken Stevens. Yuzu Tiramisu with yuzu pastry cream, raspberry coulis, matcha soaked ladyfingers, and black sesame white chocolate.

  • Course 1: Robert Carnoske. Colombian-style sancocho tamal with quick-pickled summer vegetables.

  • Course 2: Tiffany Dawn Taylor. White fish with tomato and okra consommé, roasted tomato emulsion, Campari and champagne-pickled stone fruits, and corn tuile.

  • Course 3: Joel Bein. Sai Oua with fried Khao Niew in Gaeng Phet broth (Pork sausage with sticky rice in red curry broth).

  • Course 4: Tyler Whitson. Chicken and king mushroom with garam masala, with cucumber and wild garlic salad and ginger-arbol aioli.

  • Dessert: Provided by Jones Assembly’s pastry chef, Laken Stevens. Yuzu Tiramisu with yuzu pastry cream, raspberry coulis, matcha soaked ladyfingers, and black sesame white chocolate.
