Convivial Concepts Plans Substantial Growth in 2026
Joe Jungmann and Lesley Rawlinson are the owners and founders of Convivial Concepts, a hospitality company that includes Paseo Grill — turning 20 in 2026 — Hopscotch, City & State Venue & Events, catering services, and two new concepts for this year, one of which we can tell you about; the other will have to wait for more developments.

First up will be The Goat Sports Bar in Bricktown. Located in the former Pink Parrot (among other concepts), the facility has passed what Rawlinson called “the big hurdles” in terms of inspections, and they’re expecting a March open. She also confirmed that they have hired veteran bar manager Ricky Kirkpatrick as GM.
“We’ll be offering sports bar fare — heavy on apps, sandwiches, and burgers — and cocktails and beer,” Rawlinson said. “We’ll have wine, too, but it’s going to be a cocktail bar with a great beer selection mainly.”

The initial plans call for nearly 50 televisions, but Rawlinson said they’ll reassess once everything is up and running. The facility includes a rootop patio that faces Chickasaw Bricktown Ballpark. “To be clear, you can’t see inside the stadium; the patio just faces it, but it does offer a great view of Bricktown. We can’t fully enclose it, but it is covered, and there is a big screen television out there, so we’re thinking it’s a great location for private parties.”
Menu development is ongoing, and Convivial Concepts Executive Chef Carlos Martinez is working with Jungmann and Rawlinson on the project. “Much of the menu is dependent on what equipment we can get in the relatively small kitchen,” Rawlinson said. “We’re waiting to see how everything fits, and then we’ll know what dishes are and aren’t feasible.”

The big news for fans of Paseo Grill and the Paseo District is that the expansion of Paseo Grill is fully funded and underway, the result of which will be a weekend brunch! “We are shooting for April for brunch service,” Rawlinson said. “With our 20th anniversary coming, we knew it was time to add a banquet room and brunch to help drive growth. We’ve always been closed on Sundays, but when brunch starts, we’ll be open Sundays just for brunch. We will still close for dinner.” Menu development is underway on brunch, too, so no definitive list of dishes is available yet.

Convivial Concepts will also revive The Whole Enchilada at some point in the near future, but Rawlinson said they’re still working on where and when right now, and the other concepts, including the as-yet unannounced one, are the priorities. The popular TexMex joint opened in Santa Fe Plaza in 2010 and closed in 2016. Rawlinson and Jungmann have kept it on the back burner to revive ever since, and this might have been the year, but for the other opportunities.
