OKC Underground Podcast: Carlos “Charlie” Alvarado
Carlos “Charlie” Alvarado is currently the DOO for New State Burgers and Good For A Few, one of the best new bars in the metro. He is a veteran hospitality pro, including a long-ish stint with Social Order Dining Collective at The Jones Assembly. While most white folks call him Charlie, I’ve called him Carlos – his given name – since a fascinating outside Trompudo’s Tacos the day before it opened to the public. We tell the story in this episode.
Alvarado has created something special with GFAF, and it’s because of him that I first ate chapulines, and we subsequently created a toast associated with the toasty crickets. In this episode we talk tacos, Taco Club (he is one of three members, with Christ Castron and me), the best traditional Mexican food around town, GFAF, hospitality, gringo Mexican food, and his new son Archie.
